Monday's Salmon, Quinoa & Asparagus

Pesto Bread Crumb Salmon

Ingredients
- 1/2 Jar pesto
- 1 Teaspoon salt, pepper, garlic powder, onion powder
- 1 Cup breadcrumbs
- 2 lbs salmon
- 1/2 Cup parmigiana cheese
- 1/2 Box quinoa
- 1 Bunch asparagus
Instructions
1. Preheat oven to 400 degrees
2. Get a glass pan and put parchment paper down
3. Cut skin off salmon (optional)
4. Put salmon in pan
5. Layer seasoning, pesto, cheese and breadcrumbs on salmon in that order
6. Cook for 17 - 20 minutes
